This balsamic reduction, or arrope, is made from Pedro Ximénez grapes that are boiled down and reduced to a concentrated and delicious, thick syrup.  It differs from honey and syrup in that it has an intense color, smoked aroma with a distinct sweet, bitter and acidic taste.
